Blackberry Muffins

Recipe Ingredients

¾ cup all-purpose flour ¼ teaspoon baking soda 1 teaspoon baking powder ⅛ teaspoon salt ¼ cup sugar ¼ cup vanilla yogurt 2 tablespoons butter, melted 1 egg, lightly beaten ½ teaspoon vanilla extract ½ cup fresh blackberries ! Topping 1 teaspoon fine lemon zest 1 tablespoon granulated sugar

8 easy steps to make these tasty blackberry muffins

   Mix the dry ingredients in a medium size bowl

Add in the butter and mix.

Add in a lightly beaten egg.

Fold in the yogurt and vanilla extract to the batter, the batter should remain thick.

In a medium bowl dissolve the sugar in warm water.  Once dissolved stir in the yeast. Let sit for about 5 minutes while it proofs or gets a little foamy.

Divide the batter evenly between six muffin tin wells. Bake in a 400°oven for 20 mintes.

      Remove muffins from muffin pan and cool on rack.
