New Years Day Black-Eyed Peas

Recipe Ingredients

 butter  onion celery  tomatoes dried black-eyed peas chicken broth water cajun spice blend spinach dalt and pepper

melt the butter and saute the onion, celery, and tomato.  Add in the dried peas and continue cooking for about 1 minute.

– Pour in  chicken broth and water, bring to a boil over medium-high heat. Lower heat and simmer and cover with the lid slightly ajar.  Continue simmering for about 2 hours. 

add the canned spinach and a teaspoon of the Cajun spice blend and continue cooking for about 15-20 minutes..

In the South the tradition of  eating black-eyed peas or Hoppin' John ,on New Year's Day is thought to bring prosperity in the new year. Growing up with parents from the South my Mom made this tasty dish every new years day.
