Blackberry Muffins

Recipe Ingredients

¾ cup all-purpose flour ¼ teaspoon baking soda 1 teaspoon baking powder ⅛ teaspoon salt ¼ cup sugar ¼ cup vanilla yogurt 2 tablespoons butter, melted 1 egg, lightly beaten ½ teaspoon vanilla extract ½ cup fresh blackberries ! Topping 1 teaspoon fine lemon zest 1 tablespoon granulated sugar

8 easy steps to make these tasty blackberry muffins

   Mix the dry ingredients in a medium size bowl. Add in the butter and mix.

Add in a lightly beaten egg. Fold in the yogurt and vanilla extract to the batter, the batter should remain thick. With a rubber spatula or wooden spoon gently fold in the blackberries.

 Divide the batter evenly between six muffin tin wells. Sprinkle the tops with the sugar and lemon zest topping. Bake in a 400° preheated oven for 18-20 minutes.
