How to Make Small Batch Homemade Chocolate Fudge

 INGREDIENTS - milk - chocolate  - sugar - light corn syrup  - butter - salt - vanilla 

Add milk to saucepan and melt the chocolate over a medium heat.

Cook and stir until the chocolate is melted.

Add the corn syrup, sugar, and salt and continue cooking stirring constantly until the mixture comes to a boil.

Continue cooking until chocolate mixture reaches 234°F.  A candy thermometer works best.

Remove from heat and add the butter and vanilla. DO NOT STIR.

Leave the candy thermometer in the pan and let cool to about 110-115 degrees, about 40-45. minutes,

Use a hand mixer on low, beat for about 2-3 minutes until the fudge  begins to lose it's glossy appearance.  Alternately you can use a wooden  spoon to beat in the vanilla and butter for about 15 minutes

Line a small baking dish with foil and lightly spray with vegetable oil.

Pour fudge into dish and let cool.

Remove from foiled pan and and cut into squares.
