Small Skillet  Apple Pancake

 2 eggs  ½ cup milk 2 tablespoons sugar ¼ teaspoon vanilla ½ cup all-purpose flour 1 tablespoons butter 1 large apple, peeled, cored  sliced thin 2 tablespoons brown sugar ¼ teaspoon ground cinnamon  pinch of ground nutmeg

Step 1

Preheat oven to 425 degrees.  On the stovetop heat a small cast iron skillet and melt the butter

In a medium bowl or 4-cup measuring cup, whisk together the eggs, milk,  vanilla, sugar, and salt. Add the flour and mix until smooth Set aside.

Step 3

Slice the apples and layer them on the bottom of the skillet. Sprinkle the nutmeg, ginger, and cinnamon over the apples. Stir the apples and cook until the apples start to softened, about 3-4 minutes.

Step 4

Stir in the brown sugar and continue cooking for about 3-4 more minutes until the apples are now very soft.

Use a wooden spoon to distribute the apples evenly along the bottom of the pan and pour the batter over the apples

Step 6

Place the skillet in the oven and bake at 425 degrees Fahrenheit until the batter rises and browns, about 18-20 minutes

Step 7

The pancake with rice and look beautiful, however, it's normal for it to deflate when it comes out of the oven. Sprinkle with powdered sugar and serve immediately.
