1medium red potatopeeled and slices 1/4 inch thick
1Cajun sausage, fully cookedchopped in bite sized pieces
1red pepperseeded and sliced into thin strips
2slicesonionsliced thin
¼teaspoondries red pepper flakes
1tablespoonolive oil
pinchkosher salt
Instructions
Preheat the oven to 350º Fahrenheit. Lightly coat the bottom of a small baking dish with a little bit of the olive oil. Arrange the sliced potatoes evenly in the casserole dish.
Arrange the sausage over the potatoes. Arrange the sliced peppers and onions on top of the sausage.
Sprinkle the red pepper flakes and drizzle the remaining olive oil over the peppers and salt..
Cover the casserole dish with aluminum foil and bake for 45 minutes, check after 35 minutes to avoid overcooking. The potaotes should be soft.
Notes
The recipe can be doubled or tripled easily.
If it looks a little dry, add a tad more olive oil.
Potatoes should be tender and fully cooked before removing them from the oven.
