Ingredients

brown sugar

Crisco

egg yolk

cold coffee

unsweetened applesauce

plus 2 tablespoons all-purpose flour

baking soda

teaspoon
salt
¼
teaspoon
ground cinnamon
¼
teaspoon
ground nutmeg
⅛
teaspoon
ground cloves

raisins
Instructions
Mix the shortening, sugar, and egg until well combined and smooth.
Stir in the applesauce and coffee, mix to blend.
Add the flour, baking soda, salt, nutmeg, cloves,and cinnamon. mix well.
Fold in the raisins.
Refrigerate the cookie dough for 2 hours.
Preheat the oven to 400° Fahrenheit.
Use a small cookie scoop to drop dough onto the parchment lined baking sheet.
Bake for 10-11 minutes.
Remove from oven and let cool for a couple minutes before transferring to a cooling rack
Notes
This recipe uses 1/4 cup of shortening. However, you can use a 50/50 of unsalted butter and shortening.
