I n a medium size bowl combine the butter and sugar and use a spoon to mix until creamy. Add in the flour and mix until a dough ball forms.
Place dough on a lightly floured pastry board and roll out to about 1/4 inch thickness.Use a 1 ½-2 inch cookie cutter to cut the dough and place on a parchment lined baking sheet
Bake for 9-11 minutes until set, cookies should have a very light brown around the edges only.
