This shakshuka for one is a simple, satisfying meal made with eggs gently cooked in a flavorful tomato and pepper sauce. It’s an easy single-serving recipe that works just as well for breakfast or brunch as it does for a quick dinner.
Heat the oil in a small skillet over a medium heat. Add the diced onion and bell pepper and cook, stirring, for 4 minutes or until softened. Add the garlic and cook, stirring, for 1 minute or until fragrant.
Add the diced tomatoes, ground cumin, paprika and ground coriander. Season to taste with salt and pepper.
Reduce the heat to low and simmer uncovered for 5 minutes or until the sauce begins to thicken slightly.
Make two (2) indentations in the sauce, and crack an egg into each indentation. Continue cooking on low until the egg whites have set and the egg yolks have set to your liking.
Remove the skillet from the heat and garnish with the chopped parsley. Serve with crusty bread .
Notes
The number of eggs added can be increased depending on personal preference. Dried red pepper flakes can be added for a little kick.Once the eggs have been added, the skillet could be transferred to the oven until the eggs have been cooked to your liking, as an alternative to cooking the eggs on the stovetop.Cover the skillet with a lid once the eggs have been added to speed up the cooking process.
