Instructions
Crack the eggs into a medium bowl. Gently whisk, then add the milk.
Add the softened cream cheese in small dollops.
Heat an 8-inch skillet over medium-high heat and melt the butter.
Pour the egg mixture into the pre-heated skillet.
Shake the pan to stir the eggs. They should be creamy; be careful not to overcook.
Season with salt and pepper, top with chives or cilantro, and serve right away.
Notes
A very important part of getting your eggs creamy, is not adding the eggs until you have the correct skillet temperature. A easy test is to melt the butter in the skillet over medium heat. Once it starts to bubble without browning or burning, the pan is ready.
