These creamy scrambled eggs with cream cheese are my go-to when I want something warm, rich, and fast, whether it’s 7 in the morning or 7 at night.

Two eggs, a splash of milk, and a spoonful of cream cheese is all it takes. Cooked in a small 8-inch skillet, this recipe for scrambled eggs and cream cheese makes one generous serving, so there’s no big pan to scrub and no leftovers to worry about.

And here’s the best part: it’s just as good for dinner as it is for breakfast. When the day got away from you and nothing sounds like real cooking, a quick breakfast for dinner is the answer. You probably have everything in the fridge already.

I must confess it was over 30 years ago when I was first introduced to adding cream cheese to eggs, I’ll never forget that first bite.  A co-worker brough in an electric skillet and a dozen eggs to make breakfast for the group and after that first bite, I was hooked!

Why Cream Cheese Makes Scrambled Eggs So Creamy

The cream cheese melts into the eggs as they cook, which gives that soft, silky texture instead of dry crumbly eggs. It adds richness and a little zing, and the extra fat keeps the eggs tender.

The milk loosens the mixture so everything cooks gently. Just one tablespoon of cream cheese is enough to make the eggs creamy without turning them heavy or tasting like a bagel spread.

Ingredients for Scrambled Eggs and Cream Cheese

You only need a handful of simple ingredients:

  • 2 eggs
  • 1 tablespoon milk
  • 1 tablespoon cream cheese, softened
  • 1 ½ teaspoons butter
  • Pinch of salt and pepper, to taste
  • Chopped chives or cilantro, for added flavor and garnish

You’ll also want a medium bowl, a smaller size whisk or fork, and a small 8-inch skillet. Set the cream cheese out ahead of time so it’s soft and ready to go.

How to Make Creamy Scrambled Eggs with Cream Cheese

  1. Crack the eggs into a medium bowl. Gently whisk them, then add the milk.
  2. Add the softened cream cheese to the bowl in small dollops.
  3. Heat your 8-inch skillet over medium heat. Melt the butter.
  4. Pour the egg mixture into the skillet. Shake the pan to stir the eggs, the way Julia Child did it. 🙂 Use a rubber spatula to finish mixing and cooking. The eggs should look soft and creamy.
  5. Take them off the heat before they overcook. Season with salt and pepper to taste, sprinkle on the chives or cilantro, and serve right away.

🧽 Dish Duty: Light Just one skillet, a small mixing bowl, and a whisk or spatula to wash. Cleanup is quick and easy, especially if you use a nonstick skillet.

Tips for the Creamiest Scrambled Eggs

A few small things make a big difference:

  • Soften the cream cheese. Soft cream cheese blends into the eggs instead of staying in cold lumps.
  • Use a small skillet. An 8-inch pan keeps a single serving of eggs in a thicker layer, so they cook gently.
  • Keep the eggs moving. Shaking the pan stirs them without much fuss and keeps the curds soft. Alternately, you can use a rubber spatula, but shaking is my first suggestion.
  • Properly heat the skillet. For me this was probably the top reason scrambled eggs didn’t turn out nice and creamy at home, have patience with the heating step. An easy way to test the skillet temperature is melt the butter in the skillet over medium heat. Once it starts to bubble without browning or burning, the pan is ready.  If you have a thermometer the pan should be about 300 – 315 degree Fahrenheit.
  • Don’t overcook them. Pull the eggs off the heat while they still look creamy. They’ll keep cooking a little on the way to your plate.
  • Eat them right away. Creamy scrambled eggs are best the minute they come out of the pan.

A Quick Breakfast for Dinner

Breakfast for dinner is one of the easiest ways to get a real meal on the table when you’re tired. These scrambled eggs and cream cheese come together in one small skillet with ingredients most of us always have on hand, so there’s very little to shop for, chop, or clean up.

For something more dinner like, serve them alongside a simple salad or some fresh fruit. This is my favorite way to do the breakfast for dinner thing, it’s light and quite elegant way to chow down on eggs in the evening.

Notes

A very important part of getting your eggs creamy, is not adding the eggs until you have the correct skillet temperature.  A easy  test is to melt the butter in the skillet over medium heat. Once it starts to bubble without browning or burning, the pan is ready.
