This is the quintessential weekend breakfast for one. It takes minutes and is decadently delicious! This baked egg for one with creamy Boursin cheese which melts into the egg as it bakes and adds instant flavor.

My go-to breakfast when I want to enjoy a weekend morning with coffee and breakfast on my balcony. Add a single blueberry muffin for a sweet finish to your meal.

Ingredients

A brown egg, a small glass of milk, a small dish of butter, and a sealed container of Boursin cheese on a light wooden surface.

As you can see there are just a handful of simple ingredients. Whole milk or heavy cream, a smidgen of butter, egg, and cheese of choice. I used Boursin because I like the combination of garlic and herbs, but really you can use Aloutte or some shredded cheddar or Gruyere.

Recipe Notes

  • I’m using my Breville Smart Countertop oven. At 13-15 minutes the egg whites are set and yolk is still runny. If you want a fully cooked yolk you’ll need to increase the time to about 25 minutes I find its nice to give the eggs a minute or two under the broiler for that browned cheese top. Of course if you prefer a hard cooked yolk then increase the time.
  • Be careful when lifting out the ramekin from the baking dish, its very hot!

Place the ramekin on a baking sheet and bake at 375 degrees F for about 12 minutes for a jammy yolk.

  • 1 pinch butter
  • 1 each egg
  • 2 tablespoons Boursin cheese
  • 1 tablespoon whole milk
  • salt and pepper to taste

Recipe Directions
 

  1. Preheat oven to 375℉. Lightly butter the inside of the ramekin and add the egg,
  2. Add the milk and cheesese.
  3. Place ramekin on a small baking sheet and bake for about 12 minutes. A little longer for a more solid yolk or a minute of too less for a runnier yolk.
