Enjoy a warm, homemade cinnamon roll for one topped with cream cheese frosting. This single serving cinnamon roll is easy to prep the night before and bake fresh in the morning and perfect for a warm made-from-scratch treat.
Knead for 1 minute, then let rest in a warm spot for 20 minutes, covered with a clean linen.
While the dough is resting, stir together all of the filling ingredients.
2 tablespoons brown sugar, 1 teaspoon cinnamon, 1 tablespoon butter
Then roll out dough on a floured surface, to be about 2 inches by 8 inches.
Spread the filling on top, leaving the edges empty by ⅛-¼ inch.
Cut the dough in half so you have two 1 inch by 8 inch pieces, then roll up one strip, attach the second strip to the end and roll that one around the first strip.
Then place in a greased 10-ounce ramekin and let rest in a warm spot for 30 minutes, covered with a clean linen.
Preheat your oven to 350℉ and bake for about 20-25 minutes, or until the top starts to golden.
While the cinnamon roll cools, make the icing by creaming together the cream cheese, powdered sugar, and milk, together in a bowl with a spoon. Pour the icing on top of the cinnamon roll and enjoy!
