Ingredients and Notes
- All Purpose Flour: only all purpose flour has been tested with this recipe
- Whole Milk: the milk should be warm, ideally between 95℉-105℉.
- Butter: unsalted butter works best. Make sure the butter is soft enough to stir together with the cinnamon and sugar to make a paste-like texture.
- Cream Cheese: use full fat cream cheese and make sure it is soft enough to cream together with the powdered sugar and milk to make an icing that is smooth.
Recipe Tips
- Instead of rolling up one strip of dough with cinnamon sugar and then attaching the other strip to roll up, you could make two small rolls.
- The dough will not rise a ton while resting, but it should slightly rise and almost touch the edges after resting in the ramekin for 30 minutes. Make sure it is resting in a warm spot.
How To Make A Cinnamon Roll

Yes, the cinnamon roll needs time to rest to slightly expand before baking.
Likely under-proofed, over-floured, or over-kneaded. Be patient with rising times and use light hands when adding flour.
Frost while warm for a melty glaze or wait until fully cooled for a thicker, spreadable icing.
Cream cheese is rich and tangy, powdered sugar glaze is lighter and sweeter. Both are traditional—choose your favorite.
How To Store For later
- If making for later, store in the fridge in an airtight container for 2-3 days and reheat in the microwave until warm.
- If possible, store the icing and the cinnamon roll separately.
