This blueberry and blue cheese salad is so refreshing and great for a quick light dinner for one Made with a balsamic vinegar dressing, its has a little bit of zing and the blue cheese pairs well with the blueberries, cucumbers and avocado.

If blueberries are out of season, then try these with strawberries or blackberries. Check out the salad bar at the grocery store and see which ingredients they have available. I love the salad bar because you can purchase just the amount you need for your meal.

Simple Fresh Ingredients

Quick Instructions

Prepare the Fruits and Vegetables: Wash and dry the lettuce, grapes and blueberries. Slice the grapes in half Peel and slice the cucumber and avocado.

Make the Balsamic Glaze: Heat the balsamic and sugar mixture in a saucepan over low heat, stirring until it thickens slightly. Cool for 15-20 minutes.

Assemble the Salad: Arrange the lettuce and cucumber in a bowl. Sprinkle with salt and drizzle with olive oil; mix gently. Add the avocado and drizzle with lemon juice. Top with grapes, blueberries, and seeds if using. Top with blue cheese and drizzle the balsamic dressing over the salad.

Blueberry and Blue Cheese Salad

Ingredients

  • 1 cup spring mix salad greens
  • 8-10 slices cucumber peeled and sliced
  • slices avocado peeled
  • ¼ cup blueberry
  • 4-6 each black grapes cut in half
  • 1 tablespoon blue cheese crumbled
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 tablespoon brown sugar
  • 1 tablespoon mixed pumpkin sunflower seeds and pine nuts (optional)
  • Salt to taste to taste

Instructions

  • Wash and dry the lettuce. Peel and slice the cucumber and avocado. Wash and dry the grapes and blueberries, then halve the grapes.
  • Mix balsamic vinegar with sugar in a small bowl.
  • Heat the mixture in a saucepan over low heat, stirring until it thickens slightly. Cool for 15-20 minutes.
  • Place lettuce and cucumber in a large bowl. Sprinkle with salt and drizzle with olive oil; mix gently.
  • Add the avocado and blue cheese, drizzle with lemon juice.
  • Top with grapes, blueberries, and seeds.
  • Drizzle 2about 1 tablespoon of balsamic glaze over the salad

Notes

  • The nuts are optional or mix and match as you prefer.
  • Parmesan, Sharp Cheddar or Feta also pair well with blueberries.
  • You can also use a store bought pre-made balsamic glaze.
  • Different berries can be substituted.
