Bowls of shredded chicken, cotija cheese, salsa verde, chopped cilantro, flour tortillas, and Mexican-blend cheese arranged on a white surface, each labeled.

Chicken: This recipe uses pre-cooked shredded chicken breast, which keeps things quick and easy. Rotisserie chicken (skin removed) works perfectly and adds extra flavor or leftover grilled or roasted chicken is ideal.

If you are curious, one average 6-8 ounce rotisserie chicken breast will yield about 1 to 1¼ cups shredded cooked chicken. You can also substitute shredded pork or for a vegetarian optio use sauteed mushrooms or black beans,

Salsa Verde: The salsa is the star of enchiladas verde, bringing brightness, tang, and gentle heat. Store-bought salsa verde keeps this recipe fast and convenient. Choose mild, medium or hot depending o your heat tolerance. Also, for a creamier mix, add a little sour cream or yogurt to the salsa. If using store-bought salsa, look for “low-sodium” or “no salt added” versions.

Make homemade salsa verde with fresh tomatillos, jalapeños, onion, garlic, and cilantro – no added salt

Cheeses: Mexican blend melts smoothly and adds richness to the filling. You can also use Montery Jack for a extra creaminess or a Pepper jack to add more heat. If you like things mild the try a little Mozzarella.

Cotija adds a salty, crumbly finish that balances the creamy filling. For a milder flavor use Queso fresco or skip completely for a less salty dish.

Tortillas: This recipe uses small flour tortillas, which are soft, flexible, and easy to roll. You ca also use a corn tortilla, I prefer corn because they are so easy to roll!

Fresh Cilantro: The cilantro add freshness and flavor ad added right before serving. If you are not a fan of Cilantro you can also use green onions.

Optional Add-Ins

Want to level these up even more? Add flavor with fresh lime juice, cumin, garlic powder, and cilantro instead of relying on salty ingredients

  • Diced green chiles for extra heat
  • Sautéed onions or bell peppers mixed into the filling
  • A squeeze of lime juice over the finished enchiladas for brightness

Tips for the Best Single-Serve Enchiladas

  • Warm your tortillas: This step is small but mighty. Cold tortillas crack—warm ones roll like a dream.
  • Don’t overfill: It’s tempting, but overstuffed enchiladas are harder to roll and can leak while baking.
  • Extra cheesy? Go for it. Reserve about ¼ cup of the Mexican blend cheese and sprinkle it over the top before baking for a gooier finish.
  • Chicken shortcuts: Rotisserie chicken works great here—just remove the skin and bones first. Keep in mind it may increase the sodium content.
  • Heat level control: Salsa verde can range from mild to spicy. Taste yours first so there are no surprises.
