- Bread: You have several options , classic small french roll, ciabatta, foccacia or a section of a baguette. I will buy a baguette and slice into sections and freeze for those “must have pizza” nights. 🙂
- Mozzarella: You can use sliced mozzarella or shredded. It really depends on your preference.
- Crackers: Butter crackers are savory crackers like Ritz or Cabaret crackers. Trader Joe’s also has their version of Ritz which is very good and budget friendly.
- Marina Sauce: Alfredo, vodka sauce, or spicy arrabbiata also work very well. To keep this recipe budget-friendly, I portion and freeze marinara sauce into 1-cup and 2-tablespoon containers as soon as I open a jar. This way, I always have the perfect amount on hand without opening a full jar and letting the rest go to waste.
Substitution Tip: I made these again today, but was out of Marinara Sauce so substituted Enchilada Sauce and it turned out very tasty!!
How to Make A French bread Pizza for One

Start by preheating your oven to 425°F. Take your French bread loaf and slice it lengthwise, then place one half cut-side up on a baking sheet.
In a small bowl, stir together 1 tablespoon of olive oil with 1 clove of minced garlic. Brush this mixture evenly over the cut surface of the bread—this creates a flavorful, golden base that takes your pizza to the next level.
Next, scatter ¼ cup of mozzarella cheese (or whatever pizza cheese you prefer) over the bread. Pop it into the oven and bake for 8-10 minutes until the cheese is melted and bubbly and the edges of the bread are just starting to crisp up.
Here’s where we do things a little differently. Once the cheese has melted, spread 2 tablespoons of pizza sauce over the top. This keeps the sauce from soaking into the bread and ensures every bite stays perfectly crispy. Arrange 8-10 slices of pepperoni over the sauce.
For the finishing touch, mix 2 tablespoons of crushed butter crackers with ⅛ teaspoon of Italian seasoning and sprinkle this over the pepperoni. This cracker topping adds an unexpected crunch that makes this pizza special.
Return the pizza to the oven and bake for another 6-8 minutes until the pepperoni edges curl up and the cracker crumbs turn golden brown. Let it cool for about 2 minutes before slicing and serving.
