I know what you’re thinking is it really worth making fried rice from scratch just for one person? And the answer is absolutely yes, and here’s why. First, this recipe is just so darn easy. Use use one skillet, have minimal chopping, and just about zero cleanup. Second, it’s totally customizable swap out the frozen vegetables for whatever you’ve got in the freezer, and add a little sriracha if you want some heat. Basically, this is the kind of go-to weeknight recipe that you’ll be making on repeat once you try it.
Quick Tip: Make a larger batch of rice and freeze into smaller portions. You;ll always have cooked rice on hand for this great little recipe!
Ingredient Notes

- Olive Oil: used to cook the vegetables. If you don’t have oil, you can also use a vegetable broth with good results.
- Scallions: also known as green onions, do not omit unless absolutely necessary.
- Garlic: I love a lot of garlic, but please adjust for your personal taste preference.
- Onion: You can use a white onion, sweet onion, or red, yellow or brown onion.
- Ginger: Adjust per your preference. If you don’t have fresh ginger use a bit of ginger paste. If you really don’t like ginger you can just omit from the recipe.
- Peas, Carrots, Corn: No need to defrost before cooking. Only frozen vegetables have been tested with this recipe.
- Rice: Use leftover rice, if possible, to reduce the time it takes to make this recipe. If cooking rice fresh, use about ¾ cups dried rice with about 1 ½ cups of water. This recipe has only been tested with white long grain rice.
- Soy Sauce: Provides flavor, use reduced sodium if possible.

- Heat the olive oil in a 10 inch skillet over medium heat. Saute the vegetables, the scallions, garlic, onion, ginger, peas, carrots, and corn, until the frozen veggies are thawed and the onion becomes mostly translucent, or about 5-7 minutes.
- Add the rice, soy sauce, and spices into the vegetable mixture on the stove, stir to combine all of the ingredients and cook for about 5 minutes.
- Serve with more green onions.
