This blueberry and blue cheese salad is so refreshing and great for a quick light dinner for one Made with a balsamic vinegar dressing, it has a little bit of zing and the blue cheese pairs well with the blueberries, cucumbers and avocado.

If blueberries are out of season, then try these with strawberries or blackberries. Check out the salad bar at the grocery store and see which ingredients they have available. I love the salad bar because you can purchase just the amount you need for your meal.

Other light dinners you may enjoy inlcudes a small white and asparagus risotto, V8 vegetable soup. Try any of these with a very easy ciabatta bread roll recipe or my favorite, a Olive Bread made in a small bread machine..
