- 80/20 Ground Beef (80% lean, 20% fat): This is the all-around workhorse of ground beef; rich in flavor, juicy, and perfect for classics like burgers, Salisbury steak, and meatloaf where moisture is key. This is the one I use for almost all my ground beef recipes.
- 85/15 Ground Beef (85% lean, 15% fat): A great balance for everyday cooking. It’s leaner but still has enough fat to stay flavorful, making it ideal for casseroles, chili, and skillet dinners.
- 90/10 or Leaner: Best used when fat will be added in elsewhere (like cheese or cream sauces) or when you want a lighter dish. Great for stuffed peppers or pasta dishes where the beef is just one component.
- Pro Tip: If your recipe calls for draining fat, a slightly fattier blend (80/20) is often fine, since excess fat gets poured off while the flavor stays behind. For no-drain recipes, leaner blends (85/15 or 90/10) prevent a greasy finish.
