This mini Pineapple Chicken casserole is a delightful dinner dish that combines the sweetness of pineapple with savory chicken and a blend of complementary flavors. Ingredients Notes

Just 5 ingredients; 4 pantry staples and boneless chicken breast for a scrumptiously delicious dinner for one.

  • Chicken: Boneless skinless thin sliced works well for this recipe, you can also use chicken thighs.
  • Pineapple: The recipe calls for crushed canned pineapple. Don’t use fresh or frozen unless you want to crush it so there is a nice texture with small bits and the juices are extracted. This really is not worth the effort when canned works so well.
  • Teriyaki Sauce: If you don’t have teriyaki you can make your own by combining in a small saucepan: 1/4 cup water, 1/4 teaspoon sesame oil, 1 tablespoons plus 1 teaspoons brown sugar, 2 tablespoons soy sauce, 1/4 teaspoon honey, 1/2 teaspoon minced garlic , and 1/8–1/4 teaspoon fresh minced ginger. In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry; set aside. Bring the ingredients in the saucepan to a simmer over medium heat. Gradually add the slurry to the saucepan, whisking constantly. Continue whisking until the sauce thickens to your desired consistency, which will happen after a few minutes of simmering. Remove from heat and use immediately.

Recipe Notes

  • Serve the pineapple chicken casserole hot, garnished with chopped green onions or cilantro if desired. It pairs well with steamed rice or noodles, making it a complete and satisfying meal.

Pineapple Chicken Casserole

Ingredients

  • 1 teaspoon vegetable oil
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon sugar
  • cup crushed pineapple
  • 6 ounces boneless chicken breast

Instructions

  • Lightly oil a small baking dish and arrange the chicken in the casserole dish.
  • In a small bowl, combine the remaining ingredients and mix well.
  • Pour the mixture over the chicken. Cover and refrigerate for 1 hour 30 minutes.
  • Remove from refrigerator and stir to mix ingredients. Cover lightly with aluminum foil and bake in a preheated 350 degree oven for 30- 35 minutes.
