Whats in Creole seasoning?

In general its a mix of onion, garlic, bell pepper, paprika, basil, and thyme. I think each brand has their own slightly different mix. For my Chicken Creole recipe, I used the Tony Chachere’s brand which also includes brown sugar.

Do I REALLY need to brown the chicken first?

No, searing in a pan or broiler helps to deepen the flavor, but its not required.

Ingredients
  

  • 2 chicken thighs skinless, boneless
  • teaspoon paprika
  • 1 pinch salt and pepper
  • 2 tablespoons onion diced
  • 2 tablespoon green pepper diced
  • teaspoon celery seed
  • 4-6 button mushroom sliced
  • 10-12 cherry tomatoes halved
  • 1 tablespoon tomato paste
  • 1 pinch dried thyme
  • ½ teaspoon creole seasoning
  • 1 teaspoon cornstarcch
  • ¼ cup instant rice optional

Method
 

  1. Season the chicken with salt, pepper, and paprika.Place chicken breast on a small baking sheeting and broil for about 10 minutes, or until browned.
  2. Place the chicken on the bottom of a 2-quart slow cooker.
  3. Add the onion, celery, green pepper, tomatoes, tomato paste, creole seasoning, thyme, tapioca, and mushroom over the chicken.Cover the slow cooker and cook on low setting for 4-5 hours.
  4. Shred the chicken with a fork and stir to mix.
  5. When ready to serve, prepare the instant rice and serve.
