🧾 Main Ingredients Notes

Sausage, potatoes, onions, red peppers, olive oil and seasoning measured in small bowls.
  • Sausage: My go-to for this recipe is the fully-cooked Cajun sausage links. A Chicken Apple, Kielbasa, or Italian sausage all work well.
  • Potatoes: Red potatoes, Yukon gold, or a Russet work well in this recipe. I suggest peeling unless you prefer leaving the skin on the potatoes.
  • Peppers: You can use orange, red, yellow, or green bell peppers or a mix for a colorful presentation.

Serving Suggestions

This is a complete meal in itself! if you want more, serve it with a small salad and a slice of french bread.

How to Store Leftovers

I doubt you will have any leftovers, but if you do, store them covered in the refrigerator for up to two days. To reheat, add a little more olive oil and reheat in the microwave.
