    Easy Sausage and Potato Bake for One

    My favorite simple sausage and potato bake is pure comfort food perfection. Mix it up with an apple chicken sausage, spicy Italian, smoked turkey sausage, or Cajun flavors. Just chop, mix, and bake!

    🧾 Main Ingredients Notes


    Sausage, potatoes, onions,red peppers,olive oil and seasoning measured in small bowls.
    • Sausage: My go-to for this recipe is the fully-cooked Cajun sausage links. A Chicken Apple, Kielbasa, or Italian sausage all work well.
    • Potatoes: Red potatoes, Yukon gold, or a Russet work well in this recipe. I suggest peeling unless you prefer leaving the skin on the potatoes.
    • Peppers: You can use orange, red, yellow, or green bell peppers or a mix for a colorful presentation.

    How to Make A Sausage and Potato Bake

    Step One: Preheat the oven to 350º Fahrenheit. Lightly coat a small baking dish's bottom with a little olive oil. Arrange the sliced potatoes evenly in the casserole dish.

    Step Two: Arrange the sausage over the potatoes. Arrange the sliced peppers and onions on top of the sausage.

    Step Three: Sprinkle the red pepper flakes and drizzle the remaining olive oil over the peppers and salt.

    Step Four: Cover the casserole dish with aluminum foil and bake for 45 minutes; check after 35 minutes to avoid overcooking. The potatoes should be soft.

    How to Store Leftovers

    I doubt you will have any leftovers, but if you do, store them covered in the refrigerator for up to two days. To reheat, add a little more olive oil and reheat in the microwave.

    Ingredients

    • 1 medium red potato peeled and slices ¼ inch thick
    • 1 Cajun sausage, fully cooked chopped in bite sized pieces
    • 1 red pepper seeded and sliced into thin strips
    • 2 slices onion sliced thin
    • ¼ teaspoon dries red pepper flakes
    • 1 tablespoon olive oil
    • pinch kosher salt

    Instructions

    • Preheat the oven to 350º Fahrenheit. Lightly coat the bottom of a small baking dish with a little bit of the olive oil. Arrange the sliced potatoes evenly in the casserole dish.
    • Arrange the sausage over the potatoes. Arrange the sliced peppers and onions on top of the sausage.
