Tips for the Best Microwave Quiche:

  • Whisk well: Incorporating air into the egg mixture helps create a fluffier texture and prevents density.
  • Use medium power: High heat can make eggs tough or rubbery. Cooking low and slow (even in the microwave) is key for tender eggs.
  • Don’t overcook: Eggs continue to cook from residual heat. Stop the microwave when the center still looks slightly soft.
  • Use right size: Use a wide shallow mug or microwavable bowl, the broader base ensures even cooking and avoids the overcooked edges that can happen in tall narrow mugs. The bowl in these photos is from Anthropologie and is 12-ounce size. I think its just perfect for making single serving quiche in the microwave.

Avoiding Rubbery Eggs:

Rubbery eggs happen when they’re exposed to too much heat too quickly. For best results:

  • Microwave at 50–60% power
  • Stop cooking just before the eggs look fully set
  • Let rest for 60 seconds before digging in

This resting period allows the heat to gently finish cooking the egg, keeping it tender and creamy.

Tasting Notes

Last time I made this quiche I got side tracked and let it sit for a good 30 minutes before eating and man, it was still very good!

Ingredients

  • 2-3 thin slices baguette cubed, stale bread is best.
  • 1 egg lightly beaten
  • 2 tablespoons half and half
  • 2 teaspoons chive & onion flavor cream cheese cut into small pieces
  • 2-3 cherry tomatoes (depends on size) cut into quarters or sixth
  • 1 tablespoon swiss cheese shredded
  • salt and pepper

Instructions

  • n a small bowl milk the egg and half and half. Add a couple of pinches of salt and a pinch of pepper. Use a small whisk or fork to mix well.
  • Place the bread in the bottom of the mug or microwavable bowl.
  • Layer the cream cheese, swiss cheese and tomatoes over the bread.
  • Pour the egg mixture over the ingredients. Microwave on 50% power for 2 minute. if needed, continue cooking in 10 second intervals until done. Let sit for 2 minutes before serving.

Notes

If preferred you can leave the tomatoes out.
